2016 Défi Chardonnay
Grape: 100% Chardonnay
AVA: Sonoma County
Tasting Notes: This wine is a clear, pale yellow color. On the nose, this wine has aromas of pineapple, ripe citrus fruit, and white peach. On the palate this wine has flavors of ripe citrus, lime peel, honeysuckle, and white flower. This wine tastes like biting into a fresh honey crisp apple. This wine has wonderfully balanced acidity, and leaves a long lasting finish.
Food Pairing: Fried Chicken Sandwich, Charcuterie, Lemon Ricotta Pasta.
2019 Défi Pinot Noir
Grape: 100% Pinot Noir
AVA: Sonoma County
Tasting Notes: This wine is clear, pale garnet in color. On the nose, this wine has aromas of ripe red fruit, strawberries, and baking spices. On the palate this wine has flavors of bing cherries, ripe strawberries, rhubarb, and toasted vanilla. This wine tastes like a razzle-berry pie in a glass. This wine has wonderfully balanced acidity, and leaves a nice long finish.
Food Pairing: Bahn Mi, Ahi Tuna Poke, Mushroom Risotto.
2017 Défi Cabernet
Grape: 95% Cabernet Sauvignon 5% Petit Verdot
AVA: Mendocino County
Tasting Notes: This wine is clear, dark ruby in color. On the nose, this wine has aromas of blackberries, cardamom, tomato plant, and bell pepper. On the palate, this wine has flavors of black fruits, clove, cinnamon, tart cherries, and cigar box. This wine is high in tannin, and has great structure and acidity.
Food Pairing: Classic Burger, Flank Steak, Roasted Vegetables.
