The wine was fermented with native yeast in a mix of open top, whole cluster and barrel fermentations. After 11 months in cask the wine was and bottled with the minimum effective Sulfur addition.

An amazing Zinfandel modeled after Paul Draper’s Zinfandels at Ridge Vineyards. It’s not high-octane like most Zins, it has finesse and bright fruit complemented by earth, mineral and smooth tannins. Incredibly pleasant and an amazing pairing with a burger.

Zinfandel

California’s own jack-of-all-trades grape. Zinfandel can produce a wide range of styles from red, white, and rosé wine with varying sweetness levels. A fruit-forward, concentrated and bold, high alcohol red wine loved for it’s “jammy” fruit, smoky, and spice flavors. There has been much confusion and mystery behind Zinfandel’s origins as it is also Primitivo in Italy, and Tribidrag and Crljenak Kaštelanski in Southern Dalmatia. Believed to stem from Croatia, it is closely related to their #1 red wine, Plavac Mali. What’s not confusing is the potential greatness and quality made from this thrilling grape. Zinfandel is a no-brainer pairing with cooking BBQ on the weekends with your loved ones.

Napa Valley, California

Napa Valley, where Cabernet Sauvignon is “King.”  The valley itself in Northern California is not very big, but it is home to some of the most expensive and prestigious vineyards in California. Napa is separated from Sonoma and Central Coast by two sets mountain ranges: the Mayacamas Mountains to the west and the Vaca Mountains to the east. Being in a valley, this region can heat up pretty quickly. However, there are cooling influences like fog and ocean breezes from the San Pablo Bay that help to moderate the temperature within the valley. With more heat comes more concentrated, fuller-bodied wines, making this the perfect place for Cabernet Sauvignon. Other primary red grapes of focus are Zinfandel, Merlot, Syrah, and Cabernet Franc. The principal white varieties to look for here are Chardonnay and Sauvignon Blanc. You may also find Pinot Noir in the more southerly area of Los Carneros AVA where it can get cool enough to produce high-quality Pinot Noir. Featured AVA’s include Howell Mountain, Calistoga, St. Helena, Mount Veeder, Los Carneros, Stags Leap District, Oakville, and Rutherford. 

Maître de Chai translates to cellar master, or the person responsible for the development and aging of wine. By extension, the humble cellar master is the person responsible for the management of the winery. Established in 2012, Maître de Chai is the personal project of Marty Winters and Alex Pitts. Together they look to make wines of high quality in a way that best showcases the sense of place where the grapes are grown and the personality of the vineyard. From the ground to the bottle, the character of the wine is the focus of their endeavor. They source grapes from unique and distinct single vineyards that are impeccably farmed in California. Planted in the 1940s, the Stampede Vineyard is an own-rooted Zinfandel planting in the toe-hills of the Sierra Nevada mountains within Lodi’s Clements Hills AVA. With soils composed of decomposed granite, the Stampede. Vineyard lies on a parcel that overlooks an old riverbed on one side, and the Clements Stampede rodeo grounds on the other. The model for the wine produced from this vineyard is an ode to the style of Paul Draper of Ridge Vineyards – one of the most influential wineries in California’s history. The balance and finesse Paul has been known to employ on the field blends and old vine plantings for Ridge throughout the years has been the leading inspiration for this wine.
