Since 2005 Bernhard has been farming biodynamically in his village of Feuresbrunn,in the Wagram. Ott is one of the original members of Respekt certification. He is never content to stand still and is constantly innovating and improving. Each year we’re constantly impressed with Bernhard’s ability to change philosophy in the cellar but produce wines that are delicious and in the same level of quality or higher than the previous vintage. Gemischter Satz, “mixed bag or set”, is a mixture of several grape varieties, from the same vineyard. Planting different varieties together to minimize loss of a single variety was effective. In Ott’s blend he takes Neuberger and Welschriesling and ferments them on the skins, blending them with a co-picked and co-fermented blend of Chardonnay, Weissburgunder, Grüner Veltliner, Roter Veltliner and Riesling.
